Avocado Ice Cream

From Emandal, a Farm on a River

2 medium ripe avocados

1 1/2 c. sugar

7 T. lime juice (approximately 3 to 4 limes)

4 t. grated lime zest

2 c. pineapple juice

1/2 t. salt

4 c. heavy cream

Peel and mash avocado. Combine avocado, sugar, lime juice, zest, pineapple juice, salt, and cream in a mixing bowl. Blend until smooth. Chill.

Freeze in a hand-cranked or electric ice cream maker according to the manufacturer's directions.

[Note: my sister swears that you don't taste avocado: that this ice cream tastes fresh and citrusy, with the unctuous buttery smoothness that only avocado can give. I'll be trying it out, myself, this weekend! - Ed.]
