Karin Tracy's Mixed Potato Mash
Roast one head of garlic in the oven. Cook equal parts cubed white potatoes and sweet potatoes in simmering water till fork tender. Drain the water from the potatoes. Squeeze the whole head of garlic into the potatoes and mash, adding butter and milk as necessary to get the texture that you like. Season with parmesan cheese, fresh rosemary, salt, and pepper to taste. Spoon into a lightly greased casserole, sprinkle with more Parmesan, and bake for fifteen minutes at 350 degrees (or until toasty).
Betty Olander's Pumpkin Pie (recipe from Betty Adams)
3/4 of a 15 oz can plain pumpkin
1 c. sugar
½ c. brown sugar
2 eggs, beaten
1 c. milk
1 ½ t. cinnamon
½ t. mace or nutmeg
½ t. ground cloves
Unbaked 9-inch pie crust
Mix first eight ingredients and pour into the prepared crust. Bake at 375 degrees for 45 minutes or until a knife comes out clean. (If the crust browns before the pie is done, cover with foil, which may lengthen cooking time a tad.) Makes one pie.
Bourbon and Ginger Ale
1 1/2 oz. Bourbon
3 oz ginger ale, preferably Stewart's or something else with real kick
Stir Bourbon and ginger ale together and serve over ice with a twist and a slice of crystallized ginger. Serves one.
